Frangipan Cake

8 to 10 servings

Ingredients

15 ounces almond paste
12 ounces butter
12 ounces sugar
9 eggs
1 tablespoon vanilla
1 teaspoon salt
4 ounces sifted cake flour

Method

Preheat the oven to 350 F. In an electric mixer with a paddle attachment, beat the almond paste with 2 eggs until smooth. Add the butter and sugar and beat until light and fluffy, scraping the bowl often.

Slowly add the remaining eggs in 3 stages, scraping between each stage. Add the vanilla and salt. Add the flour and stir until it is incorporated.

Pour the batter into a lightly greased 9-inch cake pan and bake until golden brown and the cake springs back when touched.
