Le Bus Sesame Semolina
Ingredients
for the Biga (starter)
1 & 1/2 cups water, room temperature (70F.)
1/4 ounce dry active yeast or one cake fresh yeast
3 cups bread flour
1/2 teaspoon salt
Ingredients for the Dough
1 recipe for biga
1 & 1/2 pounds water (60F.)
1/4 ounce fresh yeast
2 tablespoons malt syrup (optional)
1 pound semolina flour
1 pound bread flour
2 tablespoons salt
sesame seeds
Method
To make the biga, dissolve the yeast in the water for several minutes. Mix
the flour and the salt together in a bowl, then blend in the yeast with
a spoon until combined. Turn the mixture onto a lightly floured worktable
and knead briefly until a ball is formed. It will be rough and fairly stiff.
Place the biga in a lightly oiled bowl, cover with plastic wrap and refrigerate
24 hours.
