Old-Fashioned Kugel

Ingredients

cup vegetable oil
1/4 cup granulated sugar
1 pound dried angel-hair pasta, broken into 2-inch lengths
1 teaspoon salt
1/2 teaspoon black pepper
4 large eggs, beaten
1/2 cup raisins
Method
Cook the pasta according to package directions, and drain. Set aside.
Preheat the oven to 325 F.
Put the oil and sugar in a 6-quart pot over medium heat. Cook, stirring, for 4 or 5 minutes, or until the sugar melts and turns dark brown.
Immediately add the well-drained pasta, stirring constantly so the oil and caramelized sugar are evenly distributed. If the sugar solidifies into chunks, continue stirring the pasta over medium-high heat until the sugar melts.
Remove the pasta from the pan and stir in the salt and pepper. Let the mixture cool for about 30, or until lukewarm.
Stir the beaten eggs completely into the pasta. Place the mixture into an 8- or 9-inch round pan and place it in the oven. Bake for 20 to 35 minutes, or until the top is golden and crisp.
Allow the kugel to cool for 5 minutes. Slice into wedges and serve.
