Indian Halva

(This is an Indian version of the traditional Middle Eastern confection.
The more common ingredients of ground sesame seeds and honey are replaced
here with Cream of Wheat and sugar.)
Ingredients

tablespoons butter
1 cup Cream of Wheat
1 cup sugar
3 cups water
1/2 cup blanched, slivered almonds
1/2 teaspoon ground cardamom
1/2 cup golden raisins
Method
Heat the butter in a saute pan and add the Cream of Wheat. Stir-fry for a few minutes until the wheat begins to change color. Add the sugar and stir-fry a few more minutes until the wheat acquires a light brown color. Add the water and stir. Add the almonds, cardamom and raisins. Stir and bring to a boil. Reduce the heat to low, cover and cook for five or more minutes until solid. Serve hot or cold.
