Tomato Onion Sesame Biscuits
6 to 8 servings
Ingredients
2
cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
2 teaspoons baking powder
1 stick of cold butter, cut into small pieces
1 cup buttermilk (and maybe a little more)
2 ripe firm tomatoes, cut into slices 1/16-inch thick
2 medium white onions, cut into slices 1/16-inch thick
1 cup sesame seeds
1 cup cream cheese
Method
Preheat oven to 450 F.
Sift the flour, salt, sugar, and baking powder together in a bowl. Cut in the cold butter using two forks or a pastry cutter (do not use your hands which will melt the butter) until you get the consistency of coarse meal. Do not over-mix.
Add enough buttermilk to form a ball of dough. Turn dough out onto a floured board and knead twice. Roll dough out to 1/4-inch thickness and cut out circles with a teacup or a biscuit cutter. Place biscuits on a greased cookie sheet. Place a slice of onion and tomato on each biscuit. Dot with butter and top with sesame seeds.
Bake for 15 minutes, or until golden brown. Top with a little cream cheese and serve hot.
