Sweet Potato Pone with Grand Marnier Cream and Blackberries

Ingredients for the Pone

tablespoons butter
1 cup dark brown sugar
1 teaspoon freshly grated nutmeg
1/2 teaspoon finely grated ginger
1/2 cup molasses
6 cups grated sweet potatoes
juice and zest of 1 orange
pinch salt
Ingredients
for the Sauce
2 & 1/2 cups heavy cream
1 teaspoon butter
1 teaspoon orange zest
1/2 cup Grand Marnier liquor
fresh blackberries for garnish
Method for the Pone
In a large skillet heat the butter, sugar, nutmeg, ginger and molasses until melted. Add the grated sweet potatoes, orange zest and juice and let simmer over low heat, carefully stirring the potatoes as they cook. The object is to cook slowly, stirring the mixture until it achieves a rich brown color, about 40 minutes. The mixture will become very thick. After cooking, keep warm in the oven.
Method for the Sauce
In a saucepan reduce the heavy cream by almost half; add the butter and orange zest. Remove from the heat and add the Grand Mariner. Serve warm over the sweet potato pones, garnished with fresh blackberries.
