Marinated Strawberry Rose Parfait

Ingredients
cups
strawberries, halved
1 cup rose wine
8 egg yolks
8 tablespoons sugar
2 cups chocolate cookies, crushed
Method
Marinate the strawberries in the wine for 1 hour. Strain the berries, reserving the liquid, and puree the berries in a food processor or a blender.
In the top half of a double boiler, mix the egg yolks and sugar with a whisk until well blended. Slowly stir the reserved wine into the egg mixture, whisking continuously, until mixture coats a spoon, about 5 to 8 minutes. Remove from the heat and let mixture cool completely in the refrigerator.
Spoon 1 tablespoon of the crushed cookies into each parfait glass. Top with a small amount of pureed strawberries, and then with custard. Repeat alternating layers, ending with the custard. Sprinkle with the rest of the cookie crumbs. Cover with plastic wrap and refrigerate until ready to use.
