Cucumber and Red Onion Salad

Ingredients

medium cucumbers, peeled seeded and thinly sliced
1 large or 2 small red onions, thinly sliced
1 red bell pepper, thinly sliced
1 clove garlic, minced
1 & 1/2 teaspoon prepared mustard
1 tablespoon sugar
2 tablespoons cider vinegar
3 tablespoons mayonnaise
1 tablespoon chopped parsley
1/2 tablespoon chopped fresh dill
salt and pepper to taste
paprika for garnish
4 whole fried parsley leaves for garnish (fry in 1 cup vegetable oil heated
to 350 F. until crisp, about 1 to 2 minutes).
Method
In a large bowl combine all the ingredients except the paprika and fried parsley. Allow the salad to rest for 1 hour, then serve as is, or combine with Bibb lettuce. Sprinkle with the paprika and garnish with parsley leaves
