Apple Dumplings

Ingredients

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/8 cup shortening
1/4 cup milk
2 red Delicious apples, peeled, cored and cut in half
4 tablespoons European-style butter (such as Keller's)
cinnamon and nutmeg for seasoning
Apple Syrup (recipe follows), or bottled maple syrup

Method

Preheat the oven to 400 F.

Sift together the flour, baking powder, and salt. Cut in the shortening just until crumbly. Add the milk and stir just till the flour mixture is moistened.

On a floured surface, roll out the dough just big enough to cut 4 6-inch squares. Place a half apple on each square and sprinkle with a little cinnamon and nutmeg. Pour about 1 teaspoon of the syrup over the apple and dot with 1 tablespoon of the butter.

Pull all four corners of the dough up to meet in the middle, moisten the corners, and pinch them together. Be sure to make a sealed package to help ''steam'' the apple.

Bake in the oven for about 8 minutes.

Bast the dumplings with the syrup and reduce the heat to 300 F. Cook for about 20 minutes or till they are golden brown, basting often. Serve hot with cold milk and sugar poured over the top.

Apple Syrup

Ingredients

1/2 cup water
1/2 cup apple juice
1 & 1/2 tablespoons apple jack brandy
3/4 cup light brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup European-style butter (such as Keller's)


Method

Combine all ingredients except the butter in a small saucepan. Bring to a boil, cook for about 5 minutes. Remove from the heat and whisk in the butter.
