The name of this soup in Italian means torn rags, which is what the eggs resemble after pouring into the soup.

Ingredients

8 cups chicken stock
salt and pepper to taste
pinch of nutmeg
2 eggs
2/3 cup dry pastina, stelline or ancini di pepep
1 teaspoon Romano cheese
1 teaspoon Parmesan cheese

Method

Bring the stock to a simmer and season it with salt and pepper. Add the nutmeg. Add the pastina and cook according to package directions. Beat the eggs and cheeses together. Slowly add the egg mixture to the simmering stock. Stir gently and serve.
