Fried Plantains

Ingredients

3 ripe plantains (the skin should be yellow with black marks), peeled
1/2 cup vegetable oil

Method

Slice the plantains on the bias about 1/4-inch thick. In a saute pan heat the oil over medium heat. Add the plantain chips to the pan and cook, turning, until golden brown on both sides. Drain on paper towels.
