Independence Day Barbecued Ribs

4 to 6 servings

Ingredients

Melting Pot Marinade (recipe follows)
6 pounds loin back ribs or spareribs
Backyard Barbecue Sauce (recipe follows)

Method

Place the ribs in a non-reactive container. Pour the marinade over the ribs, turning to coat. Cover and refrigerate the ribs overnight.

Prepare the grill. Grill the ribs over low heat, turning occasionally, for 1 & 1/2 hours, or until done. During the last 30 minutes of cooking, brush the ribs several times with Backyard Barbecue Sauce. Remove the ribs from the grill and cut them into serving pieces.

Melting Pot Marinade

Ingredients

2/3 cup soy sauce
1/4 cup
Filippo Berio® Olive Oil
6 cloves of minced fresh garlic
2 tablespoons chopped lemon grass
2 tablespoons grated fresh ginger
2 teaspoons Dijon mustard
2 tablespoons molasses
2 tablespoons chopped shallots

Method

Combine the ingredients and pour over selected meat.

Backyard Barbecue Sauce

Ingredients

1 cup ketchup
1 tablespoon Worcestershire sauce
2 or 3 dashes bottled hot pepper sauce
1/2 cup soy sauce
1/4 cup cider vinegar
3 tablespoons brown sugar
2 tablespoons grated fresh ginger
1/2 bunch scallions, chopped
1 tablespoon Dijon mustard
3 tablespoons diced white onion

Method

Combine the ingredients in a saucepan over medium heat. Bring to a simmer, and cook for 30 minutes.
