Minted Green Beans and Pearl Onions in a Brown Butter Sauce
6 to 8 servings
Ingredients
1
pint pearl onions
pounds cleaned green beans
1 tablespoon chopped fresh tarragon
1/4 cup European-style butter (such as Keller's)
1/4 cup chopped fresh mint
salt and pepper to taste
Method
Bring 2 quarts of water to a boil. Add the pearl onions and cook for 2 to 3 minutes. Remove the onions from the water with a slotted spoon and cool in a bowl of ice water.
Add the beans to the boiling water and cook for about 2 minutes, or until tender but not mushy. Remove them from the water and cool in the ice water. Peel the onions.
Melt
the butter in a medium saute pan. Add the onions and cook until the butter
begins to brown. Add the beans, mint and the tarragon and saute until heated
through, about 1 minute. Season with salt and pepper.
