Yorkshire Pudding with Goat Cheese
6 to 8 servings
Ingredients
1
cup all-purpose flour
pinch of grated nutmeg
1/2 teaspoon salt
1/2 cup milk, room temperature
2 eggs, beaten and at room temperature
1/2 cup water, room temperature
2 tablespoons fat drippings from the roasting pan, or 2 tablespoons oil
2 ounces goat cheese
1 tablespoon chopped parsley
Method
Preheat the oven to 400 F.
Combine the flour, nutmeg and salt in a mixing bowl. Stir in the milk and beat until light and airy. Stir in the eggs and the water and beat till well combined.
Coat the inside of an ovenproof dish with the fat drippings or the oil. Pour the batter into the dish and crumble the goat cheese over the top. Place the dish in the oven and bake for 20 minutes.
Reduce the temperature to 350 F. and continue baking 5 to 10 minutes more, until puffy and golden brown. Sprinkle the parsley over the top and serve while still hot.
