Braised Red Cabbage
6 to 8 servings
Ingredients
pounds
red cabbage, cored and shredded
1 & 1/2 cups beef stock
1/2 cup light brown sugar
1/2 cup rice wine vinegar
2 shallots, chopped
2 cloves garlic, chopped
1/2 teaspoon caraway seeds
tablespoons European-style butter (such as Keller's)
2 bay leaves
salt and pepper to taste
Method
Combine all the ingredients except the salt and pepper in a 10-quart pot and bring to a boil. Reduce the heat, cover and simmer over low heat, stirring occasionally, for 1 hour. Season with salt and pepper and serve hot.
