Dried Apricot Cheesecake
Ingredients
Batter:
2 lbs. Riccotta Cheese
1/3 cup Heavy Cream
5 oz. Sugar or 1/3 cup
Pinch of Salt
1 tbsp. All Purpose Flour
2 tsp. Finely chopped Orange Zest
5 Egg Yolks
5 tbsp. Sun dried Apricots, thinly sliced, 1/3 cup
2 tbsp. Pinenuts
Butter, for greasing the pan
If your apricots are hard you can steam them in a bamboo steamer and soak in hot tea. Drain.
Method
1.
Butter an 8' foiled spring pan.
2. Combine all ingredients into a mixing bowl and mix well.
3. Pour into the greased pan
4. Bake 40-45 minutes in a preheated 350° oven. Test with toothpick
until clean.
5. Cool 30 minutes prior to un-molding.
Base
Crust:
1/2 cup graham crackers, crushed
1/8 cup melted butter
1/2 tsp. Cinnamon
