Apple Cheese Strudel
Ingredients
1
package of Frozen Phyllo Dough, defrosted
1/3 cup Butter
1/2 cup sugar
3 egg yolks
Zest of 1 lemon
3/4 lb. Yogurt cheese or Cottage Cheese (strain liquid)
1/3 cup of Raisins, soaked in 2 tbsp. of Rum
1/4 cup finely chopped Walnuts
2 small Cooking Apples, peeled, cored & sliced (Granny Smith)
1/2 cup Sour Cream
4 Egg Whites, stiffly beaten
1 tsp. Ground Cinnamon
Melted Butter for phyllo dough
Method
1.
Cream the butter and sugar until light and fluffy.
2. Gradually beat in the egg yolks and mix until pale yellow.
3. Add lemon peel, zest and cheese, raisins, walnuts, cinnamon and apples
and just enough sour cream to combine the mixture.
4. Slowly fold in the egg whites with a rubber spatula.
5. Take one sheet of the phyllo dough, brush half with melted butter then
fold in half. Place another sheet on top, brush with butter and fold in
half. Place another sheet for a total of 3.
6. Take half of mixture and place on top. Roll phyllo into a tube.
7. Repeat with remaining mixture
8. Bake in a preheated 350° oven until golden brown. Approximately 15-20
minutes.
9. Serve with whipped cream or ice cream.
