Cabernet Cherry Pudding

Ingredients

6 oz. Semi Sweet chocolate bits
3/4 cup butter
1 cup sugar
9 eggs
1/4 cup cabernet
1 1/3 cup ground almonds
1/3 cup dried bread crumbs
1 lb. Cherries (if not fresh, jarred and drained)

Method

1. In a double boiler or microwave, melt the chocolate.
2. Cream 3/4 cup sugar and the butter.
3. Separate the eggs. Add the yolks one at a time.
4. Beat in the chocolate
5. Add the cabernet
6. Add almonds and bread crumbs
7. Add cherries.
8. Beat egg whites until soft and medium peaks. Slowly add the reaming 1/4 cup sugar.
9. Fold egg whites into chocolate batter
10. Butter and flour a 2 quart baking dish and pour batter into.
11. Bake in a preheated 350° oven for 1 hour or until a clean knife.
