Stuffed Zucchini Flowers

Ingredients

24 zucchini blossoms
1 cup mashed potatoes
2 medium zucchini
1 egg
2 tbsp diced onions
2 clovesgarlic, minced
2 tbsp extra virgin
Filippo Berio® Olive Oil
1/4 cup Reggiano cheese, grated
1 pinch marjoram
1 egg, to taste

Method

Saute onion, garlic and zucchini in Filippo Berio® Olive Oil. Season wth salt, pepper and marjoram. Add the mashed potatoes with the egg and cheese to the zucchini. Stuff the flowers half way. Deep fry for two minutes. Drain and bake at 400 degrees for ten minutes.
