Cannoli
Ingredients
Cannoli Shells
3
cups flour
2 tbsp sugar
1/4 tsp sugar
3/4 cup Marsala wine
1 tbsp butter, softened
1 egg yolk
Method
Combine the dry ingredients and resift onto a smooth work surface. A slab of marble works best. Make a well in the center and add the remaining ingredients. Using a fork, work the flour from the inside of the well out until the dough is manageable to work by hand Knead the dough until smooth and stiff. This takes about 15 minutes.
Cover and let stand at room temperature for 30 minutes. Divide the dough into quarters. Roll out the dough to 1/8 inch and cut into 3 inch rounds. Wrap dough loosely around a metal cannoli form and seal the round with a little egg wash. Deep fry in canola oil for a bout a minut or two. Drain on paper towels. Wen cool, remove the forms. Makes 32 cannoli.

1 3/4 cups confectioner's sugar
1/4 teaspoon cinnamon
1 tbsp candied citron, minced
1 tsp candied fruit peel, minced
1/4 cup miniature chocolate chips
