HONEY AND ORANGE ALMOND CAKE
Cake Ingredients:
2
cups Sugar
2 cups Almond, ground
2 cups All Purpose Flour
1 ½ tsp. Ground Cinnamon
½ tsp. Ground All Spice
7 large Eggs
½ cup Melted Butter
1 tbsp. Orange Zest
For Syrup:

cup Orange Juice
1 cup Honey
1/3 cup Confectioner Sugar
¼ cup Water
Method
1.
In a food processor ground the almonds with ½ cup sugar and transfer
to a large mixing bowl.
2. Mix in the flour, cinnamon and all spice.
3. In a separate bowl mix egg with remaining sugar until very thick. About
10 minutes.
4. Beat in the melted butter and zest to the egg mixture. Fold in the almond
mixture.
5. Spray a 2 qt. baking dish with non-stick spray. Pour batter in the pan
and bake in a 350° oven for approximately 1 hour or until a toothpick/knife
comes out clean.
6. To make the syrup, combine the all ingredients in a medium saucepan and
heat over low-medium heat or until warm and the sugar is dissolved.
7. Remove cake from oven and drizzle syrup over the cake and let absorb
for 30 minutes.
Cut into squares and serve.
