FRESH TOMATO SALAD WITH BASIL, TARRAGON AND SWEET ONION

1 tsp. Dijon Mustard
1 tbsp. Balsamic Vinegar
Juice from 1 Lime
2 cloves of Garlic, finely minced
¼ cup Filippo Berio® Olive Oil
4 medium Tomatoes, cored and cut into ½ thickness
1 large Sweet Onion, cut into ¼ thickness and separate into rings
1/3 cup Basil and Tarragon, chiffonade
4 Basil Leaves, for garnish
Salt & Pepper

Method

1. In a mixing bowl, whisk all ingredients up to the Filippo Berio® Olive Oil. Slowly mix in the Filippo Berio® Olive Oil until well blended. Add herbs.
2. On four separate serving plates, fan the tomatoes around the plate. Sprinkle with Salt & Pepper.
3. Place onion rings in dressing and toss.
4. Put onions over tomatoes.
5. Garnish with basil leaves.
