GRILLED PEPPER PORK CHOPS WITH A MANGO CORN SALSA

– 6 oz. Center Cut Pork Chops (Thick)
Juice from 1 Lime
2 tbsp. Cracked Black Pepper
Salt to Taste
Salsa:
1/3 cup Diced Red Onion
½ cup Diced Green Pepper
½ cup Fresh Corn Kernels
1 tbsp. Fresh Lime Juice
1 tbsp. Chopped Cilantro
1 Small Hot Pepper (Jalapeno or Serrano) minced
1 Mango, peeled, pitted and chopped
Method
Combine all ingredients for the Salsa in a bowl and let rest 30 minutes.
Brush both sides of the pork chops with limejuice and season with salt. Press pepper onto both sides of the chops.
Prepare the grill to medium high heat and grill the pork chops until done. Approximately 5-7 minutes on each side.
Serve and top with Mango Corn Salsa.
