PEANUT BUTTER SOUP

1 tbsp. Butter
2 tbsp. Flour
½ yellow onion, finely chopped
2 cups Chicken stock
2 cups milk
¼ cup finely chopped celery
1 cup peanut butter
2 tbsp. chopped fresh parsley
salt & pepper to taste
4 tbsp. toasted peanuts

1. In the top portion of a double boiler, melt the butter and sauté the onions over direct heat.
2. Add the flour and cook for a couple minutes.
3. In the bottom part of the double boiler, heat the milk and stock and bring to a boil.
4. Stir the milk & stock mixture into the flour mixture. Whisk over direct heat until thick.
5. Put water in the bottom of the double boiler and bring to a boil. Return the op portion of the double boiler that has the milk & Stock mixture on top.
6. Whisk in peanut butter, parsley, celery and salt & pepper to taste.
7. Divide evenly into soup bowls and top with toasted peanuts.
