GREEN ONION RICE FRITTERS

¼ cup flour
1 egg
3 scallions, sliced thin
1/3 cup cooked Carolina rice
¼ tsp. Cumin, ground
¼ tsp. Bay seasoning
pinch of baking powder
salt and pepper to taste
1 oz. Vegetable oil for frying

1. Sift dry ingredients into a bowl.
2. Fold in beaten egg, scallions, rice. Be careful not to over work, it will toughen the batter.
3. Pour oil into a nonstick sauté pan bring to a medium high heat.
4. Spoon batter into pan as if making silver dollar pancakes, turning once when batter bubbles.
5. When golden brown on both sides, remove from pan and pat dry on paper towels.
6. Float fritter on soup and top with crabmeat.
