RICE PUDDING

2 eggs, beaten
¾ cup milk
2 tsp. Butter, melted
¾ cup sugar
¼ tsp. Vanilla
¼ cup raisins
1 cup Carolina Rice, cooked
½ tsp. Cinnamon

1. Preheat oven to 350°.
2. Mix eggs, milk, butter, sugar and vanilla. Fold in raisins, cinnamon, and rice.
3. Pour mixture into a buttered ½ qt. Casserole dish. Place casserole into roasting pan and fill with hot water until halfway up the sides of the dish.
4. Bake for 1 ¼ hours or until custard is set. Allow pudding to cool down.
5. When serving, spoon into dessert bowl and garnish with Benne wafers.
