COFFEE AND WALNUT CAKE

½ tbsp. cornstarch
½ cup freshly brewed coffee
¾ cup sugar
½ cup brown sugar
½ cup golden raisins
½ cup regular raisins
½ cup chopped walnuts
½ cup butter room temperature
3 eggs beaten
2 cups all purpose flour
1 ½ tsp. Cream of Tartar
1 ½ tsp. Baking Soda
½ cup milk room temperature
1 tsp. Vanilla extract
¼ tsp. Salt

In a medium sauce pan over medium low heat, mix the coffee with corn starch
until smooth. Add ½ cup sugar and continue cooking over low heat
until sugar has thicken and dissolved.
2. Add raisins and walnuts and set aside until cool.
3. Beat the butter with brown sugar and white sugar and thick and lighter
in color.
4. Add flour and salt
5. Add cream of tarter and baking soda, slowly add the milk.
6. Add vanilla and add eggs one at a time.
7. Pour half of the batter into a buttered cake pan and spread with coffee
mixture and cover with remaining batter.
8. Bake in a preheated 350° oven until knife comes out clean.
