PAN FRIED HALIBUT CAKES

½ onion, chopped
2 cloves garlic, minced
2 tbsp. butter
1 lb. Halibut fillet, cooked and flaked
½ cup bread crumbs
3 eggs beatened
½ tsp. Lemon zest
1 tbsp. lemon juice
salt & pepper to taste
¼ tsp. Ground ginger
¼ cup all purpose flour
1/8 tsp. Cayenne pepper
3 tbsp. butter

1. In a non-stick pan over medium high heat, melt the butter and sauté the onion and garlic until tender, do not brown.
2. In a mixing bowl, combine the onion, garlic, fish flakes, bread crumbs, beaten eggs, lemon zest & juice, ginger and salt & pepper. Combine well. Chill for 1 hour.
3. Shape into four fish cakes.
4. In a non stick pan over medium high heat melt the remaining butter and sauté the fish cakes until golden brown and done..
