BAR-B-QUED RIBS

Sauce:
1 cup of Ketchup
¼ cup Vinegar
¼ cup Mustard
Juice of 1 Lemon
Zest of 1 Lemon
1 Onion, diced
3 cloves Garlic, minced
1 tsp. Chili Powder
½ to1 tsp. Hot Sauce
¼ tsp. Liquid Smoke
2 tbsp. Honey
1 ½ tbsp. Worchester Sauce

1. Combine all ingredients in a sauce pot and simmer over low heat for 30 minutes.

Ribs:

4 lbs. Pork Ribs
4 tbsp. Kosher Salt
1 tbsp. Freshly Ground Black Pepper

1. Salt & pepper the ribs, placed bone side down over slow coals or low setting on gas grills. Close lid and cook for 1 hour.
2. After 1 hour, brush ribs with sauce
3. Cut for 30 minutes to 1 hour until done.
4. For a real smoke flavor, dampened wood smoking chips and place over the coals for the last hour. For a gas grill use a smoker box.
