COCONUT COOKIES

cups all purpose flour
1 tsp. Baking powder
¼ tsp. Ground cardamon
pinch of salt
2/3 cup of sugar
½ cup room temperature butter
2 eggs, beatened
granulated sugar and shredded coconut for garnish
1 tsp. Vanilla extract

Sift together the flour, baking powder, cardamon and salt.
2. Mix the butter and sugar and until fluffy in an electric mixer
3. Gradually beat the eggs in. Add vanilla
4. Add the flour mixture slowly until well incorporated. Chill dough 1 hr.
5. 2 oz. Size of dough, roll dough in sugar then sprinkle with coconut.
Place on a baking sheet, with space between.
6. Bake in a preheated 375° oven for 8-11 minutes.
