STRAWBERRY AND GOAT CHEESE SALAD WITH POPPYSEED DRESSING

1 head of Red leaf lettuce, 4 large leaves removed the rest roughly chopped
1 pt. Strawberries, sliced
4 oz. Goat cheese, crumbled
¼ cup pine nuts, toasted
1 red onion, thinly sliced
2 tbsp. rice wine vinegar
1 tbsp. sugar
1 tbsp. Dijon mustard
2 tbsp. poppy seeds
4 tbsp.
Filippo Berio® Olive Oil
salt & pepper to taste

1. In a mixing bowl, combine the vinegar, mustard, salt & peppers, sugar and poppy seeds.
2. Blend in the

3. In a larger mixing bowl, toss the chopped lettuce with the strawberries, goat cheese, pine nuts and onions
4. Toss the salad with the dressing to coat well
5. Place a leaf on each plate and top with tossed salad
