GRILLED SALMON WITH STRAWBERRY SALSA
Salsa:
½
English Cucumber, peeled, seeded and finely diced
½ red onion, peeled and chopped
2 tbsp. Cilantro, chopped
4 tbsp. Rice wine vinegar
2 cups fresh strawberries, stems removed and diced
1 large jalapeno, ribbed, seeded and chopped
1 red pepper, seeded and diced
¼ tsp. Salt
1 tsp. Lime juice

Combine all ingredients and mix thoroughly.
2. If not serving right away, add strawberries prior to serving.

tbsp. melted butter
2 cloves garlic, finely chopped
1 tbsp. honey
2 tbsp. soy sauce
juice of fresh lime
4 large salmon fillets, boneless, skinless

Prepare the grill to medium-hot coals.
2. In a bowl combine all ingredients, except for the salmon and mix well.
3. Spray the salmon with non-stick spray and place on the grill for 3-4
minutes and flip over and brush with evenly with mixture.
4. Remove and serve with salsa.
