SHRIMP WITH STIR FRIED GREENS AND SOY DIPPING SAUCE

Ingredients
½ pound 16/20 peeled and de-veined Shrimp
¼ head Napa Cabbage
2 Carrots, shredded
¼ head Green Cabbage
6 Shitake Mushroom caps
2 teaspoons chopped Ginger
1 tablespoon chopped Garlic
¼ cup Soy Sauce
1 teaspoon Sesame Oil
1 tablespoon Vegetable Oil
1 teaspoon Black Pepper

Dipping Sauce
½ cup Soy Sauce
¼ cup Sugar
1 teaspoon Sesame Oil
½ bunch chopped Scallions
¼ cup white Vinegar

Instructions
Heat a large sauté pan. Add shrimp and cook ½ way through. Remove and reserve. Add cabbages, carrots and mushrooms and sauté for 3 minutes. Add ginger and garlic and sauté for 2 minutes. Add shrimp, soy sauce and sesame oil and cook until shrimp are coated and done. Serve over steamed rice or noodles.
