TASTY SHRIMP TACOS
Ingredients
½ pound 16/20 peeled and de-veined Shrimp (tails removed)
1 – 8 oz. can of Tomatoes (diced)
¼ cup chopped Onion
1 head Iceberg Lettuce
1/8 teaspoon chopped Garlic
2 Tomatoes (cut into wedges)
¼ cup Shredded Cheddar Cheese
2 teaspoons Chili Powder
Salt and Pepper to taste
Instructions
In a heavy sauté pan, sauté shrimp. Add chili powder, chopped
garlic, onion and diced tomatoes. Bring to a boil, then reduce heat and
simmer until most of the liquid evaporates, about 5 minutes.
Cut lettuce into long strips, or tear into bite-sized pieces. Cut Roma tomatoes into quarters.
If not able to find a waffle cone maker you may substitute warm flour tortillas or toasted corn tortillas.
Stuff the bottom of the cones or tortillas with lettuce and tomato. Top with shrimp mixture and sprinkle with cheddar cheese.
