AUNT NAOMI’S CHOCOLATE FUDGE CAKE
Ingredients
2 cups Instant Flour (comes in a 13 oz. canister)
2 cups Sugar
½ cup Butter
1/3 cup Vegetable Oil
4 teaspoons Cocoa
1 cup cold Water
½ cup Buttermilk
2 Eggs, beaten
1 teaspoon Baking Soda
1 teaspoon Cinnamon
For
the Frosting
½ cup Butter
¼ cup Cocoa
1/3 cup Milk
1 teaspoon Vanilla
1 – 1 lb. box confectioner’s sugar
Instructions
Preheat oven to 350ºF. Spray a 9 x 13 x 2 inch pan with non-stick spray.
Sit flour and sugar together. Set aside.
In a medium saucepan, bring butter, oil, cocoa, and water to boil. Add flour mixture and blend well. Add buttermilk, eggs, soda and cinnamon and pour into the prepared pan.
Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean.
Let the cake cool about five minutes while you prepare the frosting. Combine all ingredients in a medium sauce pan and heat, stirring constantly until smooth and bring it just to the boiling point, but do not boil. Pour over the cake while still warm. Cool before cutting.
