GRILLED SNAPPER WITH TOMATOES
Ingredients
4 – (6-8 oz.) Snapper fillets
3 ripe Tomatoes
Filippo Berio® Olive Oil
Salt, to taste
Ground Black Pepper, to taste
Juice of one Lemon
Oregano
Instructions
Brush Filippo Berio® Olive Oil on both sides of the fillets. Season the fish with salt
and pepper. Grill the fish for 2 to 4 minutes on each side until done.
At the same time, either on the same grill or another one, grill selected ripe tomatoes. Grill on all sides and once the tomatoes are soft, but haven’t yet split open, remove from heat. Peel the tomatoes; this will be quite easy to do. Cut them in half, removing as many seeds as possible. Do this quickly, before the tomatoes cool.
In a bowl, finely chop the tomatoes, add Filippo Berio® Olive Oil, salt, lemon juice and oregano, and beat together with a fork or whisk. Dip the fish in this delicious, thick, red sauce and serve.
