POTATO PIE
½ lb. Potatoes, diced and boiled until soft
¼ lb. Butter, melted
¾ lb. Of sugar
3 oz. Almonds, ground
1 tbsp. orange extract
1 tsp. Vanilla extract
6 large eggs
3 tbs. Irish whiskey
Deep dish pie shell, unfrozen
1.. Separate the yolks from the white.
2.. Beat the whites until stiff peaks.
3.. Beat yolks until fluffy and lemon color and set aside.
4.. In a mixer or hand beater, mashed the potatoes until smooth.
5.. Add almonds, vanilla extract, orange extract, sugar and whiskey and
egg yolks.
6.. Fold in egg whites
7.. Pour into pie shell
8.. Bake in a preheated 375° oven for 45 minutes to 1 hour until done.
