OYSTER PIE

pt. Oysters
1 red pepper, chopped
2 stalks celery, chopped
1 cup spinach, large chop
4 tbsp. butter
5 tbsp. flour
2 cup milk
1 tbsp. chopped fresh tarragon
1 garlic clove, minced
1 plum tomato, chopped
1 tbsp. chopped fresh parsley
salt and pepper
puff pastry dough

Cook the oysters in their own liquid until the edge just begins to curl.
Drain.
2. Saute the red pepper, garlic and celery in the butter until soft, about
1-2 minutes.
3. Blend in the flour making a roux and cook for 1-2 minutes.
4. Add the milk and cook until thick.
5. Add the tarragon, tomato and parsley.
6. Taste for salt and pepper.
7. Roll out puff pastry
8. Add oysters, pour into a casserole and top with pastry. Cook in a preheated
400° oven for 15 to 25 minutes until golden brown.
