MARINATED SALMON SKEWERS & CAESAR SALAS WITH SOY DRESSING

1 lb. Of Alaskan Salmon, cut into ¾” to 1” cubes
1/3 cup of Soy Sauce
2 tbsp. White Wine
¼ cup sugar
1 shallot
2 cloves of garlic
1 tbsp. fresh ginger, chopped

1. Skewer the salmon onto the bamboo skewers.
2. Place the lemon juice, soy sauce, white wine, sugar, shallots, garlic and ginger in a blender or food processor and blend for 2 minutes.
3. Marinate the skewers 4 to 6 hours and let the marinate drip off. Grill or pan fry the skewers 2 to 3 minutes each side or until medium

SOY CAESAR SALAD

2 garlic cloves
3 anchovy fillets, canned
½ tsp. Dijon mustard
2 tbsp. grated parmesan cheese
1 tbsp. fresh lemon juice
1 tbsp. soy sauce, low sodium
½ cup
Filippo Berio® Olive Oil
1 cup croutons
1 head of romaine lettuce, torn or cut into bite size pieces

1. In a blender, blend together the garlic, anchovies, mustard, parmesan cheese, lemon juice and soy sauce for 2 minutes.
2. Slowly pour in the
Filippo Berio® Olive Oil in a constant stream until well blended.
3. Toss the romaine with the dressing and divide between 4 plates.
4. Place the skewers on the salad and top with crotons.
