PAN FRIED ALASKAN SALMON & HALIBUT WITH HONEYED APPLES

granny smith apples or other good cooking apples, peeled, cored and thinly
sliced
2 tbsp. butter
1 large shallot, diced
¼ cup honey
1 tbsp. chopped fresh tarragon four for dredging, seasoned with salt, pepper
and garlic powder
2 eggs, beaten
2 cups bread crumbs (Japanese if you can get them)
4 – 3 oz. Salmon Fillets
4 – 3 oz. Halibut Fillet
¼ cup Filippo Berio® Olive Oil

Melt the butter over medium heat. Add the shallots and cook 1 minute.
2. Add the apples and cook until tender about 5-7 minutes.
3. Drizzle with the honey and tarragon. Toss and keep on the lowest setting
to keep warm.
4. Heat the Filippo Berio® Olive Oil over medium high heat in a Sautee pan until hot, but not
smoking.
5. Dredge the fillets in the flour, then through the egg and the breadcrumbs
tow ell coat.
6. Cook the fillets in the Filippo Berio® Olive Oil about 2-4 minutes on each side until golden
brown.
7. Place 1 salmon and 1 halibut fillet on serving plate and ladle apples
over top
8. Garnish with tarragon spears.
