POLENTA MIA
(MY POLENTA)

Ingredients
2 cups polenta flour (cornmeal)
7 cups chicken broth
Salt to taste, optional

Instructions
Place the polenta in a 4-quart heavy pot, preferably a copper one. Start adding the broth or water a little at a time, while stirring to prevent lumps. Place over medium heat and cook, stirring constantly, for about 35 minutes. Add the salt. The polenta is done when it starts to pull away from the sides of the pan. Add more broth while cooking if the polenta is too dense. The final consistency of the polenta, soft or hard, is to your taste.
