GRILLED
ORGANIC GLAZED CHICKEN WITH PLUM SAUCE
(SERVE AS A FIRST COURSE)
Chicken
Glaze
12 oz. soy sauce
3 oz. honey
6 each peppercorn
1 each orange zest
1 oz. ginger
2 garlic cloves, crushed
1 oz. cilantro
Plum
Sauce
2 oz. cider vinegar
2.5 oz. sugar
4 oz. plums puréed
1 pint jus Lie
1 oz. Kirsch
2.5 oz. butter
Instructions
Mix all of the chicken glaze ingredients. Reduce until it becomes syrup.
Grill chicken and glaze during the last five minutes of cooking.
Plum
Sauce Instructions
Mix cider vinegar and sugar in a saucepot and cook until golden brown syrup.
Add plum purée, jus Lie and Kirsch, and cook through.
Whisk in butter to finish.
