FLAMBÉED BANANAS

3 ripe but firm bananas
5 tbl. Butter
½ cup firm packed brown sugar
juice of 1 lime
juice of 2 oranges
zest of one orange
4 tbl. Grand Marnier

METHOD:
1. Peel the bananas and slice into 1/4 inch thick slices.
2. Melt the 3 table spoons of the butter in a saute pan and fry the bananas lightly and quickly on both sides over high heat then remove and keep warm.
3. Melt the remaining butter in the same saute pan and sprinkle in the sugar. Stir continuously to melt it and add the juices of the lime and oranges and the zest.
4. Cook this sauce for two to three minutes over high heat. Add the Grand Marnier (off the flame). Tilt the pan towards the flame to ignite. Let the alcohol burn out and then add the bananas. Heat them in the sauce and serve hot.
