IRISH SODA BREAD

4 cups all purpose flour
½ cup sugar
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
3 cups raisins
1 tbl. Caraway seeds
2 eggs lightly beaten
1 1/4 cup buttermilk
1 cup sour cream

METHOD:

1. Preheat the oven to 350F. Grease a 9" round cast iron skillet.
2. Combine the flour, sugar, Baking powder, baking soda, salt, raisins and caraway seeds in a large bowl. Blend the eggs, buttermilk and sour cream in a small bowl. Stir the liquid ingredients into the flour mixture just until the flour is moistened.
3. Knead the dough in the bowl briefly, the dough will be sticky. Shape into a ball and place in the skillet. Cut an X on the surface of the bread and sprinkle with cinnamon sugar.
4. Bake at 350° for 65 to 75 minutes. Cool in the skillet 10 minutes. Turn out onto a wire rack and cool completely.
