Monkfish and Flat Bread

MARINADE for at least 4hrs or overnight:

¼ C peanut oil
3 cloves garlic
3 Tbsp garam masala (Indian spice) and cumin & coriander seeds
2 Tbsp Tumerick
1 juice of lemon
1 Tbsp fresh ginger
hot peppers to your taste
1 C yogurt
salt & pepper

PUREE
Cook monkfish on low so marinade doesn’t burn
Brush w/ butter

FLAT BREAD (8 -10 tortillas)

2 C Whole wheat flour
1 C flour
1 Tbsp butter
salt

PULSE in food processor
Add Water slowly until dough begins to clump (about a cup or less)
Let the dough rest for about an hour for the gluten to rest

Punch dough to kneed into a loaf and slice into 8-10 pieces
Roll out with flour
Bake on griddle at 500 degrees

(add toppings to taste: onions, yellow peppers, zucchini, mushrooms)
